The No water to the bathroom problem is not the big mistake. Depending on what they failed to do it could be a simple solution that could have been easily overlooked.
However the major mistake is that RV should have never left the factory without someone discovering the error. Secondly it should have never left the dealership Someone at the dealership should have discovered the error. Those are two huge errors.
Its glaring errors like those that Let's us know that despite any marketing jargon, quality control still plagues the RV industry on many levels.
Lastly I am familiar with the RV world This is no reflection or the new buyer. Unless you were an experienced RV'er you would not know not to trust the RV world'
I didn't understand the need for an extensive thorough PDI on day one of my RV life, But 20 years later I know a PDI needs to be performed before signing on the dotted line
But the reality is the RV world is not to be trusted. An extensive PDI must be done to any RV, including a brand new one.
If I were buying that RV I would have discovered the no hot water situation because my PDI would have included it. This is the state of the RV world we live in and allow.
Understand that it's not perfect. It's been that way a long time and it's not going to get better anytime soon.

I am glad I ran separate lines to Toilet, Sink, and shower, when I gutted my unit. I always love how marketing talks about separate shut off valves at the fixtures. Those are really just convenient for fixture replacement.

The problem is that a shut off needs to be where it branches off the main line to the fixture. If I experienced a leak, I would have lost my entire bathroom area!

Regarding the tankless water heater......I would try replacing it with a standard water heater. I am afraid, you will be experiencing the tankless system cutting off, if the water pressure triggers the safety shut off built into all of those systems. I feel your pain
 
Travel land RV in Aidrie Alberta Canada is where i bought it. As thats where i live. The dealer did a full walk through and inspection, and also did the walk through with me but we did not specifically go over everything while i was there, i just asked does the generator work and the water specifically if they tested it. and yes was the answer.
If you look above the red pex lines in yellow and blue run to the bathroom but they are connected to the hot water bypass valve. The line circled in red runs from hot water on demand to kitchen sink. right at that juncture they forgot to tie the hot water line in. i question that even the correct place though as to my knowledge the output from hot water should go to bypass valve first so you can winterize unit properly. a question i will be asking when i pick it up.
